I absolutely love Sunday Mornings. It's a day of the week that we slow down, put on some coffee and some music, shout out to Dad Rock Radio and I make a bigger breakfast for the crew.
Lately, I've been obsessed with making Breakfast Sandwiches with Portofinos Golden Potato Buns. My style is Coligny Creeks eggs fried over easy topped with cheese slice (don't @ me) and a couple of slices Lepp's bacon (oven-baked baby), all laid on a bed of lemony Garlic sauteed spinach, hugged by a griddled delicious spongy bun with a slather of spicy mayo on the top half.
If we're going all out I'm frying some homemade hash browns with a bunch of garlic and herbs and I just might find time for a man-mosa (IE: dousing a Fieldhouse Gose with a shot of OJ)
It's a big one but once a week, it's totally worth it!
