Berry Season is upon us and while stuffing a fresh handful in your face might be the best part of summer, there are many other delicious ways to enjoy these little juicy super-fruits. 

Nothing beats a simple summer salad, and a great way to eat in season is to incorporate the sweet and tart flavours of our berries into a simple vinaigrette.

Ingredients

  • ≈1C Raspberries 
  • 2 Tbsp Oil
  • 1 Tbsp Balsamic vinegar
  • 1 Shallot
  • 1 Tsp Honey
  • Seasoning to taste

The Process

This is a great way to use up raspberries that are a day or two past their prime.
Dump your berries, a small shallot, and a pinch of kosher salt into your blender.
While it’s blending steam in the oil of your choice.
Add a bit of honey to sweeten it up.
